Hello Jen,
You can use the Woocommerce Products Scroller extenstion ot do this task for you. I just got the Widget to show multiple products along with animated transitions (7 animations) and multiple themes (16 themes). You can manage all the productst from the admin panel. So, all is under your control.

We’ve developed a new product block that allows you to do just this https://wordpress.org/plugins/woo-gutenberg-products-block/
Use the “New Products” block and filter on the categories you’d like to display.
