Yes I have this exact same issue and created an idea about it.
We have guides that are available for activities, each of which can take a number of people. There can be several activities on any given day.
My solution was to allow a resource to be a human (quantity of 1 or more), each with a capacity of x. that way once 1 human is used on a bookable product (activity / tour) he is no longer available for other tours / activities for that time slot but the capacity for the tour he is allocated to is still open.
This is really important for me.

YES!! this is urgently needed and also in the dashboard calendar. Admin and vendors need to see how many people places are available in a booking slot and how many have been booked.

I think you can achieve this by writing the price and per person in the description of the person type. For showing in general product you can also get per person add on by using the booster plugin.

yes this is urgently needed and the number of people in each booking also needs to be included in the information exported to google calendar f ro vendors and admin. For anyone selling blocks with people, this is absolutely essential.

this is the same issue I am having. My resources are guides that can be available for several products (activities) on 1 day. The products (activities) have a capacity of 8 or 9 people. If I make guide resource quantity 1, then only 1 person can book onto the activity. If I make the guide resource 9, then more people can book on that activity but they can also book on simultaneous activities. the guide cannot run two activities at the same time. We need the resource to have a capacity in addition to the quantity.
